The cookies had the consistency of a bagel? That doesn't sound good. I hope your next batch turns out better. Are there any other possible oil/butter substitutions that you could use if applesauces doesn't work?

I think you're doing a great job of sticking to the healthier alternatives to baking. Even though the cookies were not the consistency you expected, at least the taste was great!

I am now wondering how a cookie can have the consistency of a bagel.. it is indeed interesting. Have you ever thought of using Coconut Oil? I hear that is a healthier option, and might work better than applesauce. I look forward to seeing how they turn out next week!
